Tis the Season

to be baking!! 
For the past couple weeks I have been doing some little baking projects with my kiddos at work, and I have also been tearing up kitchens far and wide (or maybe just mine and my friend's) with some major adventures in pieland!. Last week for our 2nd annual "Friendsgiving" I made two terrific pies, both entirely from scratch.
Literally...I turned this:

That's right, folks...I pureed a pumpkin for homemade pumpkin pie, just like the pilgrims used to do. I never want to do it again, next year I will be Thankful for canned pumpkin. It's not that it's a difficult process, it's just messy and time consuming. 

The pie was delicious though, some have even called it 'the best pumpkin pie ever!'

Secret ingredients

It is no secret that I love to bake. Love love love!! I like to experiment with my baking, or find different twists for classic recipes. In my next life I'm going to open a bakery...I think I'll call it 'That One Little Pie Shop'... and on my menu will be this triple berry & peach pie I just pulled out of the oven. It smells delicious (even though there was a bit of a cinnamon disaster). 
As an amateur baker, I am always open to baking tips and Pintrest is good...but gramma is better!
She told me that adding two tablespoons of vodka (yes, vodka) to the piecrust while mixing it will result in an extra light and flaky crust. I tried this little trick...and guess what? It worked!
Most piecrust recipes call for ice water, the particular recipe I used called for two tablespoons of H2O, I substituted the water for vodka, and added an additional teaspoon of water.

Strawberry pies forever

I changed the title of my blog. People were making comments about how weird it was...which is kind of true. It was an odd name, and it required a lot of explanation. Plus, I'm afraid it was off-putting. So I've changed the name of my blog. I feel like 'slice of life' is appropriate, as I am a recreational baker with a bit of a specialty when it comes to pies (if I do say so myself).
My dad has actually taken to calling me 'pie-girl', a moniker -like my apron- I wear with great pride! (If only the it came with my own pie-maker in shining armor).

This year marks the second-annual Chambers Family Memorial Day BBQ...and last year all I was in charge of was music, but this year I was on dessert duty! Because strawberries are delicious, and in season, I decided that a strawberry pie would be perfect. Also, there is a strawberry stand bike-riding distance from the house. (A bike ride justifies a hefty slice of pie, right?)
Dad made his 'famous' ribs n' chicken, mom spruced up the backyard and I did my part to make our Memorial day one to remember!

When life hands you lemons...

The other day my dad brought home a bag of lemons. Evidently, someone he works with at the credit union was giving them away, and he felt the need to snatch up at least half a dozen.
After telling me this he added, "I wonder how many lemons you would need for a lemon meringue pie?" which we all know is dad-speak for: "You should make me a lemon meringue pie!"
So today I made my very first lemon meringue pie! The crust wasn't too hard (since I'm pretty much a professional pie crust maker). The lemon part was a little trickier, and as for the meringue? Well, this pie was a bit of a collaboration between me and my mom (and my mom's stand mixer!)
I'll admit, it's not the prettiest pie I've ever made (chalk it up to following the recipe for an 8 inch pie, and putting it in a 9 inch pie pan!)
I can say, though, that of all the pies I've made...this is one of them!
I tried a slice and I wasn't sure if I severely messed up, or if I just don't like lemon meringue pie, but according to my target audience (my dad, whose favorite pie is lemon meringue) it was a bit tart, but not too bad. I'll call that a win!

PS...my hands will probably smell like lemon zest for about a week

Easy as Pie!

I am thrilled to announce that so far this year I have already checked two items off of my 'bucket list'!!
I made a snow-angel:
And if you're thinking 'Wow I can't believe it took you 25 years to accomplish this small life-experience!' (which I know all of you are) consider the fact that I live in an area where it never very rarely snows. But a few weeks ago I got to spend a cabin weekend in the snow, and not only did I get a relaxing weekend of girl-time, but I got to meet a tiny goal as well.

My second item was more of an personal accomplishment. Ever since I discovered the joy of pie-making, I've always wanted to make my own pie-crust. I must admit that when it comes to baking pies I am, in fact, a "cheater cheater pumpkin (pie) eater". Pillsbury's pre-made roll-out pie crusts have enabled me to fake it 'til I bake it! They are tasty and convenient and unintimidating.
But this weekend my stress-baking senses were tingling, and thanks to a pie cookbook my sister got me for Christmas, I decided I was going to tackle this project!
Just a few simple ingredients: flour, salt, sugar, butter, shortening, ice water

It was pretty easy to make...but a pain in the butt to roll out, even so, my triple berry was pretty delish!

You can't have your pie and eat it too...

I like to bake. Baking relieves my stress, and stimulates my creativity. Mostly just cookies, because they're fairly easy and the ingredients are usually just around. But lately, I really like to bake pies. I also like to eat pies...and homemade pies are the best to eat (so I've been told). However, my father has a ridiculous sweet-tooth, and now that I'm back living with my dearest, darlingest Mumsy and Popsicle it has become increasingly more difficult to keep baked goods around. About a month ago, I made a peach and blackberry pie. Y'know...just 'cause
It was not only the best and most prettiest pie I'd ever made, but it was probably one of the tastiest pies I'd ever eaten. But I only got to eat about two slices. I made this pie on a Monday afternoon; it was gone by Tuesday evening.

Last Saturday, my parents had a friend over for a BBQ...so my mom 'commissioned' a pie. I decided to make an apple pie with a layer of pecans and brown sugar under the crust.
I won't lie...it was a really yummy pie. According to dad, it was the best pie he'd ever had. Which apparently was cause for him to eat the half that was left over the next day. Just for once I want to make a delicious pie and have it last longer than a couple of days. I would like to bake a pie and get to eat a slice for dessert every night for a week without my dad devouring the pie I'd worked so hard to make.

Accio Butterbeer (cupcakes)

With the final film coming out tonight at midnight (eek!), Harry Potter-mania has taken over yet again. I picked up the first book about 12 years ago in middle school and I was immediately sucked in to the magical universe J.K. Rowling geniusly created. My sister and I are re-reading our way through the books, and in an attempt to bring this whimsical world to life, I decided to whip up a batch of Butterbeer cupcakes from a recipe I found online (and modified slightly).
First I laid out all my ingredients:
Flour
Baking Powder
Baking Soda
Salt
Butter
White Sugar
Brown Sugar
Eggs
Vanilla
Buttermilk
Cream Soda
Then I mixed together all my dry ingredients (2 C flour; 1 1/2tsp baking powder; 1/2 tsp baking soda; 1/4 tsp salt)
Then, I creamed 1 stick butter; 1/2 cup white sugar & 1/2 cup dark brown sugar
Mixed in 3 eggs; 1/2 cup buttermilk; 1/2 cup cream soda; 1/2 tsp vanilla & all the dry ingredients
I filled my cupcake cups about 3/4 the way full, baked them for 15 minutes at 350 degrees...
...and let them cool over night before frosting

So...I forgot to take pictures of the frosting-making process, but I melted a bag of butterscotch chips with 1 tsp of butter and about half a cup of pre-made frosting (it is VERY sweet) and used that to top the cupcakes. I also added a shake or two of sprinkles for some extra sparkle!
(I used green, because that's what we had; not because I'm a Slytherin, 'cause I'm not. If anything, I'd probably be in Hufflepuff, but I digress...)

The finished product:
They are delicious, 'Honeydukes quality', if I do say so myself...

Now I'm going to take my nerd self, curl up in a chair with one of my confections, and finish reading Harry Potter and the Chamber of Secrets

Recipe for Disaster

Along with being less of a stay-at-home loser, for 2011 I am also going to attempt to enjoy cooking. I can cook; I mean I can read and follow a recipe and all. I'm a pretty decent baker, and I really enjoy doing that...but cooking just never really clicked with me, but I am vowing to give it a chance.
So far this year I have tried 2 new recipes, I made a really tasty mac & cheese in my slow cooker which lasted me two dinners and two lunches. Tonight I tried to make these chicken tenders. They were supposed to a health, grown up alternative to chicken fingers. I covered chicken breast cutlets with PanKo bread crumbs, onion soup mix and crushed Ritz crackers and then baked them in the oven. They were gross.
I hate when I cook something gross for many reasons. 1) I put the work into it; 2) I don't get dinner; 3) I hate wasting food; and 4) I hate wasting my money. I was really disappointed, and I think this is one of the reasons I'm so soured on cooking. The results are so unpredictable. If you are trying a new recipe, it's hard to know what to expect. It's so hit and miss.
With baking a cookie is a cookie. Also, I can make peanut butter cookies or brownies or cupcakes as many times and I don't get sick of them, but I can only stand enchiladas so many days in a row without going crazy.
I'm still going to try to enjoy cooking more often, and maybe try a different cookbook as well...

All in a day-off's work...

I love when my phone rings on a Saturday. I especially love when the voice on the other end greets me with, "sorry to bother you on your day off, but..."
This just happened. In fact, I had a parent call me to ask what time the middle school Christmas party was going to be. The same Christmas party that I sent a postcard, an email, a flier home from confirmation, a notice in the bulletin, AND have announced in church for the past two weeks.
This is another prime case of 'I love my job, I do, but...'
I mean, it's not like I actually have a life, since none of my friends live close-by, but I'm really trying NOT to make my job my whole life. Sometimes I need days off, everyone needs days off. It's how I recharge. If I work 24/7 or even 8/7 I would get so burned out that I would become less effective at my job. My weekends are MY time. Not that I do anything with my time...but, if I don't have separation now, then my workaholic ways will become a habit. Someday I could have a husband, and a family and at that point I will need my days off to spend with them. Now I'm enjoying having days to veg out, or bake 6 dozen gingerbread cookies with out having to think about my job.

My grown-up Christmas list

Obviously, as I've gotten older, the things I'm asking Santa for are becoming less frivolous and more useful. Gone are the days of asking for Barbie's Dream House, games for my gameboy, and Garth Brooks cassette tapes. Grown-up Lauren asks for more grown-up things, like Beauty and the Beast on DVD, or fun kitchen stuff. One thing on my list that I'm really hoping for is what I used to refer to as 'a whir-er' but is actually called an electric hand mixer (which would make mixing electric hands so much easier)
Okay, as much I want it for Christmas, I kinda want it now. Do you know how hard mixing 4 3/4 cups of flour in 1/2 increments is when you do it by hand? The first few are no problem, but once you're three cups in, it takes some serious muscle to incorporate that junk! It wouldn't be such a big deal, except I'm afraid that by the end of this holiday baking season I'm going to have one arm bigger than the other from all the stirring I'm doing.
Tonight I made the dough for ginger bread cookies (it has to refrigerate overnight, so I'll roll out the cookies and bake them tomorrow). Also, tomorrow I'm making gingerbread cupcakes and frosting for both sets of baked goods. FROM. SCRATCH.

I love to bake. I'm not sure why, cause I hate to cook, but baking is so much fun for me. I can't wait until the smell of gingerbread is wafting through my apartment. It's such a more joyful scent then, say, soup.

"I jumble outta bed and I stumble to the kitchen...

Yup-workin' 9 to 5, that's me!! Except for today, when I work from 9-4 and then from 7-8 because I have council tonight (bleh).
Anyway today's mug is truly a coffee mug. By that I mean it has 'coffee' written on it. It's one of those mugs that you just kind of end up with. Someone goes 'oh, you collect coffee mugs? Here's one filled with reeses mini peanut butter cups, happy birthday'...I'm pretty sure that's how acquired this one.


To accompany the coffee I drank out of this cup this morning, I had one of the yummy cookies I baked last night for breakfast. If I do say so myself, they are pretty delish. I am very impressed. I was in a baking mood last night, so I followed the recipe on the back of the flour to make chocolate chip cookies, but (and this is one of my MANY quirks) I like chocolate chip cookies, but not chocolate chips. So I made them with peanut butter chips instead. And then I glued two cookies together with cream-cheese frosting mixed with Nutella and a few sprinkles of cinnamon. They are kinda amazing.
